Steps

  1. Heat the oil in a large, lidded frying pan.
  2. Cook the chopped onion over a high heat for a few minutes, then stir in the curry powder, ginger, and garlic.
  3. Cook for 1-2 minutes until fragrant, then stir in the chopped tomatoes, chickpeas and seasoning.
  4. Cook for 8-10 minutes until thickened slightly, then top with the cod fillets.
  5. Cover and cook for another 5-10 minutes until the fish is cooked through.
  6. Scatter over lemon zest and coriander, then serve with lemon wedges to squeeze over.
